Craving banana bread but don’t want to compromise on health? This recipe has all the flavour and none of the guilt! Made with ripe bananas, applesauce, and Juice Plus+ Vanilla Complete, it’s a nutritious twist on a classic favourite. Perfect for breakfast or a snack, it’s moist, delicious, and easy to make. Customise with your favourite nuts or dried fruits for added variety.

Ingredients

+ 3 ripe bananas, mashed

+ 1/3 cup unsweetened apple sauce

+ 2 eggs or egg replacer

+ 2 scoops/sachets Juice Plus+ Vanilla Complete

+ 120g oatmeal

+ 1 teaspoon baking soda

+ 0.5 teaspoon sea salt

+ 1 teaspoon cinnamon powder

+ 10ml vanilla extract

Variation: You can add nuts or dried fruits to the dough to provide variety.

Directions

  1. Preheat the oven to 195 degrees.
  2. Mash bananas until smooth.
  3. Beat eggs and add apple sauce.
  4. Add in all dry ingredients and mix well.
  5. The dough should have a smooth, sticky consistency, like cake mixture. If it is too dry, add a dash of your choice of milk.
  6. Put the mixture in a greased bread tin and bake for about 45 minutes. Depending on the size of the tin and your oven the baking time may vary. The bread is ready when you prick it with a toothpick and no dough sticks to it.
