Raw Carrot Cake

Made with wholesome ingredients like dates, carrots, and Juice Plus+ Vanilla Complete, this flourless, vegetarian cake is naturally sweetened and packed with flavour. No need for an oven—just a food processor and a little chilling time, and you’ve got a delicious raw cake recipe ready to enjoy!

 

 

Ingredients

+ 4 whole carrots

+ 1 lemon, juiced

+ 50g raisins

+ 12 dates

+ pinch salt

+ ½ tsp vanilla powder/extract

+ 2 scoops/sachets Juice Plus+ Vanilla Complete

+ ½ tsp cinnamon

+ 1 cup cashews

+ 1 tbsp water

+ 1 tbsp honey or maple syrup

+ 2 tbsp coconut oil

+ lemon zest

 

 

Directions    

  1. Peel and chop carrots. Use food processor to blend into fine pieces.
  2. Add raisins, dates and juice from ½ a lemon to the food processor and blend again.
  3. Add salt, cinnamon, vanilla and 2 scoops/sachets of Vanilla Complete shake mix. Blend.
  4. Spread mixture in a glass pan lined with parchment paper.
  5. For topping: blend cashews, water, coconut oil and honey until creamy.
  6. Spread mixture on top of carrot base and top with lemon zest.
  7. Chill, serve and enjoy.
