Ingredients
Biscuit Base:
+ 1 cup digestive biscuits (or graham crackers), crushed+ 2 tbsp melted or coconut oil
Berry Mousse (Middle Layer):
+ 1 cup mixed frozen berries (raspberries, strawberries, or blueberries)+ 1/2 cup silken tofu
+ 1 scoop Juice Plus+ Perform
+ 1-2 tbsp maple syrup (to taste)
+ 1 tsp vanilla extract
Chocolate Topping (Top Layer):
+ 1/2 cup cacao nibs+ 1/4 cup almond milk (or plant-based milk of choice)
+ 1 tbsp maple syrup (optional for sweetness)
+ A few extra frozen or fresh raspberries for garnish
+ Mint leaves (optional, for garnish)
Directions
Prepare the Biscuit Base:
- Combine the crushed biscuits and melted butter in a mixing bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of serving glasses or dessert jars to create an even layer.
- Place the glasses in the refrigerator to chill while you prepare the other layers.
Make the Berry Mousse:
- Blend the frozen berries, silken tofu, Juice Plus+ Perform, maple syrup, and vanilla extract in a high-speed blender until smooth and creamy.
- Adjust the sweetness with additional maple syrup if needed.
- Spoon the mousse evenly over the chilled biscuit base and smooth the tops with a spoon.
- Return to the refrigerator to set for at least 30 minutes.
Prepare the Chocolate Topping:
- Melt the cacao nibs with almond milk in a double boiler or microwave in short bursts, stirring frequently until smooth.
- Add maple syrup if you'd like a sweeter chocolate layer.
- Pour the melted chocolate mixture gently over the berry mousse layer in each glass.
- Allow the chocolate to set slightly in the fridge for about 10–15 minutes.
Garnish and Serve:
- Top each dessert with frozen or fresh raspberries and a sprig of mint.
- Serve chilled and enjoy!
